Hot Blueberry Beef Stroganoff
Ingredient List:

2-3 lb Chuck Roast
-
1 Jar Hot Blueberry/Pear Salsa
-
1 cup Sour Cream
-
1/4 Cup Chardonnay
-
1 Cup Sliced Mushrooms (optional)

Salt & Pepper

NOTE: If you desire, adding one cup of sliced mushrooms to the crock pot about half way through cooking cycle (2 hours) makes a nice addition.

Brown chuck roast in hot pan and then put in crock pot
-
Cover meat with full jar of Blueberry/Pear salsa
-
Add chardonnay and cook for 4 hours on low

Remove roast and chop into bit-sized pieces

Strain blueberries and veggies out of juice,

Mix fruit and veggies with sour cream and mix into meat
-
Add Salt & Pepper to taste
-
Serve over rice or linguine noodles
