Hot Blueberry Beef Stroganoff

Ingredient List:

  • 2-3 lb Chuck Roast

  • 1 Jar Hot Blueberry/Pear Salsa

  • 1 cup Sour Cream

  • 1/4 Cup Chardonnay

  • 1 Cup Sliced Mushrooms (optional)

  • Salt & Pepper

NOTE: If you desire, adding one cup of sliced mushrooms to the crock pot about half way through cooking cycle (2 hours) makes a nice addition.

  1. Brown chuck roast in hot pan and then put in crock pot 

  2. Cover meat with full jar of Blueberry/Pear salsa

  3. Add chardonnay and cook for 4 hours on low

  4. Remove roast and chop into bit-sized pieces

  5. Strain blueberries and veggies out of juice,

  6. Mix fruit and veggies with sour cream and mix into meat

  7. Add Salt & Pepper to taste

  8. Serve over rice or linguine noodles
